It's already late here and I'm hungry. It'll be too late and unhealthy to eat at such time but looking at the photo above makes me all the more hungry. This is a Mississippi Redfish Courtboullion with Seafood Dirty Rice. This recipe was created by Chef John Currence from Mississippi and is a winning recipe for the 2008 GREAT AMERICAN SEAFOOD cook off.
This recipe is my favorite among the rest since it's a mixture of rice, seafood and a little bit of meat with all the herbs, sauce and spices. Just reading through the recipe made my mouth water and it seems that I could already smell the delicious aroma of this dish. If only I could try out this recipe. It does seem a little bit complicated and requires a lot of spices which I'm not sure if it's available here. But then, I can always look for a substitute. I'm not also familiar with the fish being cooked in this dish since it's seems like a local one. It's indeed best to utilize domestic seafood since it's a lot fresher, tastier and not to mention cheaper compared to the imported ones.
